Fruit Cake - Made without compromise!

When it comes to our Fruit Cakes it is all about time and our Plum & Apple Brandy Fruit Cake really is a labour of love.

  • We soak Bramley Apples and Fresh Plums in 27 Litre demijohns of fine French Brandy for a minimum of three months.

  • Fabulous ingredients are combined and mixed by hand to preserve the integrity of the fruits.

  • The cake is gently baked and then allowed to cool.

  • Each cake is then pierced approximately 500 times to differing depths but never all the way through.

  • The liquor from the soaking is then fed to the cake and allowed to slowly seep into the cake.

  • We wrap the cake in layers of greaseproof paper then finish off with a foil layer.

  • The cakes are laid down in their ‘bunk beds’ and left to mature for a further three months.

  • A shot of the Plum & Apple liquor is a must when the job is finished ;-)
